01 / ABOUT THE PLACE

About this place

The moment the bowl arrives, the broth reveals its surprising density, offering resistance against the soup spoon. Jagura’s tonkotsu miso soup is designed less for casual sipping and more to coat noodles and toppings like a sauce, drawing comparisons to a thick stew or slow-simmered curry. Lifting the thick noodles—crafted with 100% domestic wheat—brings up a heavy coating of broth, delivering deep miso richness and robust pork savour in every mouthful.

The lineup extends from the standard miso ramen and ajitama soft-boiled egg version to a fully loaded special miso ramen piled with chashu pork and nori, alongside a spicy red miso bowl heated with chilli peppers. For the dipping tsukemen, which pairs flat noodles with the rich base, diners can choose regular, medium, or large noodle portions at no extra charge.

Counter seats are stocked with black pepper, ichimi chilli, and curry powder, allowing guests to pivot mid-meal into an aromatic, spiced broth. After finishing the noodles, tipping a bowl of white rice into the thick remaining liquid turns the bowl into an impromptu tonkotsu miso curry rice, ensuring none goes to waste.

The shop features a compact layout centred on counter seating, creating a calm, approachable setting well suited for solo diners.
